Viñadores de Gredos “La Bota de Doré” 2019 – Gredos, Spain

Complex, oxidative and utterly unique.

La Bota de Doré from Viñadores de Gredos is one of winemaker Rubén Díaz’s most distinctive creations – a Chasselas Doré made in a solera-style, oxidative method inspired by the traditions of Jerez. Crafted with minimal intervention and organic farming, it is a wine of depth, intensity and remarkable character.

Fermented with 10 days of skin contact, the wine is then aged in very old 540-litre barrels with an intentional air gap, allowing slow oxidative development. Each year only half the barrel is bottled, with the following vintage topping it up – creating a living solera that adds complexity and continuity.

Expect wonderfully layered aromas of pear, quince and white flowers, alongside nutty, saline and gently savoury notes. On the palate it is intense yet beautifully balanced, with vibrant acidity, oxidative depth and a long, textured finish.

Golden-hued, aromatic and complex – combining freshness with rich, nutty, solera-style character.

Perfect with:
Antipasti, cured meats, olives, Comté cheese, lardo and bold, savoury tapas dishes.
